Ingredients:
- 50 grams tapioca pearls
- 200 ml coconut milk
- 400 ml water
- 50 grams sugar
- 2 teaspoons agar-agar powder
- 1 teaspoon konjac jelly powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
- 1 tablespoon Yes Superfood Dragon Fruit Powder
Method:
-
Prepare the Tapioca Pearls:
- Bring water to a boil in a small saucepan.
- Add the tapioca pearls and stir occasionally. Cook over medium heat for about 10 minutes, or until the pearls are mostly translucent.
- Remove from heat, cover the saucepan with a lid, and let the pearls soak for another 15 minutes.
- Once fully translucent, drain the tapioca pearls and rinse them under running water. Set aside.
-
Make the Dragon Fruit Syrup:
- Combine 1 tablespoon of Dragon Fruit Powder with 100 ml (about ½ cup) of hot water. Stir until smooth and syrup-like in consistency.
- Mix the tapioca pearls with the Dragon Fruit syrup. Let them sit for 10 minutes, then drain and set aside.
-
Prepare the Jelly Base:
- In a small bowl, mix the sugar, agar-agar powder, konjac jelly powder, and cornstarch.
- In a separate small saucepan, combine 400 ml water, 200 ml coconut milk, and the salt.
- Gradually whisk in the dry ingredients, ensuring the mixture is smooth before heating.
-
Cook the Jelly:
- Heat the mixture over medium heat, stirring constantly, until it just begins to boil.
- Gently stir in the pink tapioca pearls to distribute them evenly.
-
Assemble and Chill:
- Pour the mixture into a 12 x 12 cm x 5 cm glass container. Use a spoon to remove any bubbles from the surface.
- Refrigerate for several hours until fully set.
